INGREDIENTS
Makes 2 large granitas
1 large pineapple, cubed & frozen
160ml Fruit Lagoon Pina Colada
100ml light rum
2 Tbsp lime juice
Fresh pineapple slices for garnish
METHOD
Add the frozen pineapple along with all the other ingredients to a blender. Blend until smooth. Pour into a shallow tupperware and place in the freezer. Agitate the mixture with a fork every 30 minutes scraping along the surface to create crystals. Continue scraping & freezing until the whole mixture is frozen into crystals.
Serve in large coupe style glasses and garnish with pineapple slices.

100ml Pina Colada mix
60ml rum
120ml pineapple juice
ice
sparkling soda water
METHOD
Fill a cocktail shaker with ice, pina Colada mix, pineapple juice & rum. Shake vigorously. Pour into glasses & top up with sparkling soda water.
Litchi Colada

INGREDIENTS
150ml Pina Colada mix
3/4 cup chopped litchi flesh
1/2 cup litchi juice
1/2 cup coconut or white rum
1-2 tbsp freshly squeezed lemon juice
Simple syrup or honey to taste
2 cups ice cubes
METHOD
Combine all the ingredients in a high-powered blender. Blend until the mixture turns slushy. Taste and adjust the sweetener, lemon juice and rum as needed.
Pour the lychee colada into two chilled cocktail glasses. Garnish with a sprig of mint or a maraschino cherry and sip away!

25ml Fruit Lagoon Pina Colada Mix
25-50ml Light Rum
25ml Lemon Juice
METHOD
First add the iced tea then mix the rest of the ingredients in a shaker and pour.
Garnished with Pineapple and a cherry
Served in a tall glass
